Finding tomatoes and corn is still easy, and many people are acquiring them while they still can. However, the cold weather results in cravings for roasted vegetables and richly baked warming entrées such as silk corn quiche, buttery, and garlic-laced tomato tart. They are recipes that provide a meal plan for your family. The meals are both homemade and healthy. This fall, the last thing you need is to suffer from nutritional diseases due to your unhealthy diet.
This meal has its roots from Ghana. The Ingredients for the fish include 45-6-oz skin-on red snapper fillets, patted dry. 1/4tsp. Of either Okra or Kosher salt. Alligator pepper, or you can use freshly ground black pepper as an alternative. 1/2 tsp. Cubeb pepper or Uziza, which is referred to as Ashanti Pepper. ½ Green medium papaya that is ripe. It should be peeled and discarded on the inside.
A single bunch of Cilantro, which has to be small. 2Tbsp. Of the extra virgin oil. A little red onion and a garlic clove. Both of them should be coarsely chopped—11’’piece ginger, which should be peeled and coarsely chopped. However, you should not peel it if it’s organic—¼-1/2 tsp. of either dried bird chiles or hot chile powder. One lemon sliced into halves.
As for the Chips, you will need 1b. Puna, white yams, or 2-3 sweet potatoes as an alternative.1tsp. Of either coconut or dark brown sugar. 1 ½ tsp. Kosher salt which should be divided. 3tbsp. Extra-virgin olive oil also should be separated. Freshly grounded black pepper. 1tsp. Chile powder and a Drunk Apricot Shito, which will be used during serving. Having a spice mill or a mortar and pestle will make it easier when preparing the meal.
Preparing the Meal
The first focus will be on the fish fillet. It would be best if you sliced them into ½ in a crosshatch pattern. Then you seasoned both sides using salt and pepper(alligator). Toast cubeb peppers inside a small skillet that is dry over medium-low heat while occasionally shaking for about 3minutes until fragrant. Transfer it to a mortar and pestle. Allow it to cool, then you coarsely grind and set aside.
You chop the Cilantro leaves and stems. Place the remainder of the Cilantro leaves aside. After chopping your Papayas, transfer them to a blender and add oil, 1-2 tbsp of water if it is necessary. Add the chopped Cilantro and other ingredients such as garlic, ginger, ground chile, ¼ tsp. Salt then the reserved ground cubeb pepper.
The mixture should then be blended to a smooth paste. Coat the fillets on every part using marinade and rub sore marks. Place the fish, skin side down, as a single layer inside a baking dish that fits. Cover using a lid or alternatively a plastic wrap. Wait for about 2-12 hours.
Shift your focus to preparing the chips. Fill the bowl with water and peel the yams while slicing them. Cut each quarter to ½ thick slabs, and the length of each slab depends on the Yam size. Add the slices of Yam to the bowl and try to prevent oxidation.
After all, yams have already been cut; you can swish in water to remove excess starch. Refill the bowl and redo the process till the water becomes clear for about an extra 2minutes: sugar and ½ tsp. Salt should be added. The solution should be stirred until it dissolves.
Add the drained chips and proceed to soak for 30 minutes—Preheat the oven to 450°. Transfer the drained chips to a rimmed baking sheet. Drizzle using 2tbsp.oil. Season it using black pepper, sprinkle with chili powder and 1tsp of salt. Toss to ensure it is coated and spread out in an even layer. Roast the chips while turning it halfway for 20minutes. They should be golden brown and crisp in nature.
The broiler should be heated, and the excess marinade from fish and place fillets removed. Turn the skin upon a different rimmed baking sheet. Broil till it becomes browned and crisp. This should take an estimated 5-7minutes.
Take a vegetable peeler and shave the reserved papaya into ribbons. Use the leaves from the reserved Cilantro stems and slice the reserved lemon to two wedges. At this point, the food is ready to be served, and you can transfer the fish to plates and add papaya and Cilantro on top. Mound the Yam chips closer to the fillets and serve with Shito and Lemon wedges along.
Peanut Butter Blossom
A peanut butter blossom is used in American Christmas Cookie Tin, and without it, the tin will seem incomplete. Now you are probably wondering how to make these homemade cookies. Well, it’s quite easy.
The Ingredients for cookies include; 1 ½/192 g cups of unbleached all-purpose flour. 1/2 tsp. of baking soda and fine sea salt. ½/113g cup of unsalted butter, which should be at room temperature. ½/113g cup coarse salt. ½ cup /100g granulated sugar. 1teaspoon of pure vanilla extract. ¾/192g cup well-stirred natural crunchy peanut butter that should be salted. An egg at room temperature.
For the Ganache filling, you only need two things: 3ounces of 75g semisweet chocolate and 3tbspn of 42g Unsalted butter.
You initially prepare the cookies by preheating the oven to 350°F/180°C and placing racks on both the upper and lower thirds of the oven. Notably, it is important to line 2baking sheets using parchment paper.
Whisk together the flour, baking soda, and salt in a medium bowl. Beat together the butter, sugar (should be brown and granulated), and vanilla on medium-low speed until it becomes smooth. This can take an estimated 2minutes. Add peanut butter to the mixture until it becomes smooth. Add an egg, reduce the speed to a lower one, and stir the flour mixture until it becomes whole.
Put dough on the prepared baking sheets. It should be on a level and about 1 ½ inch and 4cm apart. It should be 20 per sheet. Make a diameter divot in the middle of each cookie. You can use a small measuring spoon for this.
Proceed to bake the cookies until they become firm and golden brown on the edges and soft in the center. Rotate the sheets from front to back and top to bottom halfway through the baking time. When cookies come from the oven, you can place the indentations with the tool you had initially used.
Allow the cookies to cool for about 5minutes, then proceed to place them in a wire rack to ensure they are completely cooled.
The ganache is prepared by putting both the chocolate and butter inside a microwave-safe bowl. The Microwave should be on, High, in intervals of 30 seconds while stirring till it becomes smooth. Allow it to cool, then transfer the ganache into a small plastic bag (should be resealable) and push it towards the corner of the bag.

Allow the cookies to rest at room temperature until the ganache becomes firm for an hour. Alternatively, you can set in a refrigerator for about 30 minutes. It can be stored at room temperature for a week in an airtight container.
Fresh Corn Quiche
This is a simple brunch meal plan to prepare for your family. The Ingredients are three eggs, which should be large, ½ small onions (coarsely shaped), a tablespoon of all-purpose flour, sugar, and salt. 1 1/3 cups half. 3tablespoons of butter that must be melted. 2 cups fresh corn kernels or frozen should be cut from 2ears. A deep-dish frozen pie crust and thawed.
